Some of you may remember the Bombay pasta salad at Bosko’s. I know after working there for 4 years, they retired it at some point, but it was one of my favorites. I have had a few friends ask about it (most recently my close friend Robyn Tamura) and my main Bosko’s Go! recipe advisor provided me a baseline recipe he found online. As it’s not exact, I’m getting close and decided to post my first version. I will update it each time I make it.

If you’re too lazy and don’t mind spending a high price, Whole Foods has a curry chicken salad that is pretty close and you can just add pasta. They used to always have it in the food area, but after the pandemic it’s a hit or miss. Another secret to making this recipe easy is buying the rotisserie chicken breast from Costco or Safeway.

A few alterations if my memory serves correct, the chicken breast was in cubes, I use shredded. Also I believe there were almond slices, other recipes recommend cashews, but I don’t have nuts in my recipe. I also don’t recall red onion or celery in the Bosko’s version, but it’s in mine. Lastly Bombay was always made with pasta shells, but I used Rottelli pasta for this recipe. If you try making it I hope you it enjoy it and it brings back those good ole Bosko’s memories.

The Recipe

Ingredients

  • 1 cup mayo
  • ½ lime juice
  • 3 tsp curry powder
  • 1 celery stalk
  • ¼ red onion
  • ¾ cup of raisins
  • 3 cups shredded chicken breast (easy to buy rotisserie chicken breast from Costco)
  • 6 oz shell or rotelli pasta (uncooked) – boil for ~7 min
  • Pinch of salt if needed, taste first

Instructions

  1. In a bowl mix mayo, lime juice, and curry powder stir together
  2. Add celery, red onion, raisins and stir in with mayo mix
  3. Add chicken and mix in curry mix
  4. Add in cooked pasta with curry chicken mix and stir
  5. Cover and let meld overnight in the refrigerator
  6. Eat away the next day!
